Jamaican Jerk cooking is the soul of Caribbean Food - hot, spicey and full of life. It's so awesome (or Irie, as we say in Jamaica), people have been known to spontaneously jump up and dance after eating our Jerk!
Jerk cooking originated in the lush tropical hills of Jamaica centuries ago by runaway slaves called the Maroons. Using native spices, thyme, scallion, pimento berries (allspice) and the fiery hot Scotch Bonnet Pepper, meat was slow cooked over coals and pimento logs to create a deliciously spicey dish. It is from this rich tradition, Jerk cooking was born - Praise Jah!
